fix: add missing Assets.xcassets with AppIcon.appiconset

Xcode build was failing because the asset catalog referenced in
project.pbxproj didn't exist on disk. Added:
- Assets.xcassets/Contents.json
- AppIcon.appiconset/Contents.json (single 1024x1024 slot, no image yet)
- AccentColor.colorset/Contents.json
